Jollof Rice, Nigerian Dish - How to Cook

What You’ll Need:
Tomato Sauce Recipe
Ingredients
35g Tomato paste
4g Habanero (Habanero to taste)
7.5g Ginger
4oz red onions (for frying)
91g Vegetable Oil
3 cloves Garlic
1.25oz red Onion (for blending with Ginger, Garlic, Red Bell Peppers)
4oz Red Bell Pepper
8 oz Chicken Stock
1-2 Chicken Bouillon cubes
Reserve salt to taste towards end of cooking process
The Cooking Process:
Puree 1.25oz Red Onion, 4g Habanero, 3 cloves of garlic, 7.5g ginger, 4oz bell peppers, about 1oz of
water in blender (set aside)
Heat Vegetable Oil (Do not let oil smoke)
Add 4 oz of Red Onions to oil with 35g of Tomato paste
Put in pot and stir constantly. When the Onions caramelize and pot contents are darker, add the
contents of the blender
Add the pureed items in blender to the pot
Add 8oz Chicken Stock
Add 1 Bay Leaves
Add .2oz Black Pepper
1/2 teaspoon Curry powder
Add 1 cube of Bouillon cube
Keep stirring and do not let burn
The tomato sauce is done when the oil separates to the top
Jollof Rice Prep
Bring 4 cups of Long Grain, White Rice to a boil
Using a sieve, drain the cooked rice from water
In an oven-safe cookware, put the drained rice and incorporate the tomato sauce until the rice is evenly
coated in sauce
Place the rice in the oven for 45 minutes at 350 degrees
The Jollof Rice is ready when the Tomato sauce is fully absorbed by the rice
Yield is 8 cups of Jollof to feed 8 adults as a main dish
